Grown in Faraday in Bendigo, the Apricity Pinot Gris saw 3 days skin contact and was sent to a French oak 5000 litre barrel for the remainder of fermentation. Left on lees for 8 months, bottled unfiltered and unfined with minimal added sulphites.
